Drys (sift together)
- 1 1/2 C flour
- 1 t salt
- 3 T sugar
- 2 1/2 t baking powder
Wets (mix)
- 2 eggs - beaten
- 3 T melted butter
- 2 Cup Milk
- 1/2 t vanilla (optional)

2-3 (makes 9-10 3" pancakes)

Heat griddle to low-medium heat. Sift together the dry ingredients into a bowl. Melt butter in glass pyrex, set aside. Warm milk in microwave for 1 minute. Slowly add the butter to the milk, whisking the milk constantly. This will allow the butter to stay liquid. Beat the eggs in a separate bowl. Slowly add the milk/butter mixture to the beaten eggs, again whisking constantly to temper the eggs. If using vanilla, add it to the egg mixture now. Add the wets to the drys. Whisk vigorously until well combined. Add butter to the griddle. Using a 1/3 cup ladle, pour cakes into 2.5" - 3" circles. If adding fruit or chocolate chips add them now. Cook on one side until golden brown. Using a rubber spatula, flip each pancake. Tip: To keep pancakes warm while you are completing all the batches, keep in a 200 F oven.
